Recipe for the Dionysia

These pomegranate fig bars make a tasty treat while watching movies during the festival.

Filling Ingredients:
1/2 pound dried figs
1/2 cup pomegranate juice
1/2 cup red wine
1/4 cup meyer lemon juice

Chop up the figs into quarters and soak in the combined liquids overnight in a sealed container. When ready to make the bars, drain the liquid (you can drink it if you want!) and mash up the figs into a paste.

Dough Ingredients:
1/2 cup white sugar
1/2 cup light brown sugar
8 tablespoons butter, cut up
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups flour

Mix flour, baking soda and salt in one bowl. In a separate bowl, beat sugars and butter, mix in egg and vanilla. Then slowly add the flour mixture and beat until smooth. Wrap the dough in plastic and refrigerate at least one hour. Preheat the oven to 350 degrees. Roll out half of the dough and place in a 8-inch square baking dish (which has been greased and dusted with flour). Spread the fig filling on top of this. Roll out the second half of the dough and lay it on top of the filling, crimping along the edges to seal it in. Bake for 20 minutes. Cut into bars.
